Callie Kiepke, General Manager (BHEC)

Born and raised in Arden Hills and New Brighton, Minnesota, Callie loved the hospitality industry from the moment she started as a hostess at 18. She graduated with a degree in Hospitality from the University of Wisconsin-Stout while working as a server and bartender. Her senior year of college, Callie took an internship with TPC Twin Cities, where she was introduced to hospitality operations, sales and event planning.

After nearly 10 years with TPC, Callie found her home with Morrissey Hospitality at Bunker Hills Event Center. Hired as Catering Sales Manager, Callie was drawn to, and motivated by, the high energy year round at Bunker Hills . In 2018, she became Director of Catering, building strong sales and service teams, and spearheading dozens of successful events. During Covid shutdowns, Callie was instrumental to Bunker Hills’ continued successes – even as they pivoted almost daily. As her time increasingly was spent at Kendall’s, she was reminded how much she loved the daily hustle-and-bustle of restaurant operations. Today, she works as the General Manager, continuing to grow her skillset and be an incredible asset to Bunker Hills.

What is the best part of working in a restaurant?

The best part is the energy on a busy evening. I love being a part of the teamwork during a busy service, and giving guests the best experience possible.

How long have you worked at Bunker Hills/Kendall’s Tavern & Chophouse?

It will be seven years in June! I started as the Catering Sales Manager, moved into the Director of Catering role in 2018, and to the General Manager role in 2021.

What do you look for when you go out to eat?

Typically, I look for genuine, friendly service. My husband and I enjoy going to dive bars with bar food, and restaurants with an upscale menu. I’m happy dining in both atmospheres as long as the service staff is great and friendly!

If you could have a meal with anyone, who would it be and why?

Tom Colicchio, and not just for the food knowledge and industry experience. He also seems like a great guy to have a good conversation with!

What is your favorite thing about working at Bunker Hills / Kendall’s Tavern & Chophouse?

The people – the staff, my fellow managers and the guests. It’s very fun to have such different conversations with people that walk in our doors. I enjoy working within a team atmosphere and that is what we try to provide here at Bunker!

What was your least favorite food as a child? Do you still hate it, or do you love it now?

Onions! I still can’t really stand them but I enjoy cooking with them. My mom didn’t know I didn’t care for them until I was an adult, though. I always ate what she made for me and my family.

Favorite Cocktail:

A glass of chardonnay in the summer, and cabernet in the winter!

What was the worst style choice you ever made?

I grew up in the 90’s, so I had big glasses, braces and a perm most of my childhood! It was stylish back then though!

What do you do with your spare time?

When I have time off, I enjoy spending the days (or hours) with my husband, family and friends. We enjoy hosting friends at our house, going out to find good pull tab spots and catching sporting events. We’re big hockey and Twins fans! I also try to keep in touch with my creative side by quilting and sewing in my craft room.
