The Basics:
Name: Mark Clough
Where do you work? Tria Restaurant
When were you hired? Nov 2012
First position title: Server/bartender – the “everywhere man”
Current position title: General Manager
The Nitty Gritty:
Why did you take the position with Morrissey? What drew you to this position?
I didn’t know anything about Morrissey coming in. I had been working up north at Madden Resort, but it is a seasonal property, and I needed something to do in the winter. A GM at Madden suggested that I consider moving down to St. Paul. Shortly after, I got a call from the GM at the time at Tria, and I’ve been here ever since.
What does hospitality mean to you?
Hospitality is treating guests like you would if you were at your own home. I picture myself as the host at my house, and I envision how I’d like my guests to be treated.
What are three things you appreciate about working in hospitality?
- The variety of the job – it is really something different every day.
- The ability to try, and learn about, really amazing food, drink, wine, and techniques.
- The fast-paced environment. Before you know it, your day is over!
Describe a situation where you felt pride in yourself, your work or your team.
I think of those nights when we’re super busy, and we’re understaffed. Everyone comes to preshift knowing the circumstances, and everyone comes together, pitches in, and knocks it out of the park. Every guest leaves happy and everyone is appreciative.
I also think of when, in 2017, our executive chef passed away unexpectedly the week of Mother’s Day. Everyone at Tria, and from every other concept in the company, came together to help out. We had chefs from other kitchens, servers from other restaurants – even the president of the company was there on Mother’s Day to set up the patio. I’m proud to work for a company that takes care of each other.
What do you want your customers to remember?
I want them to leave thinking that this is one of the best dining experiences they’ve ever had. From great drinks and wine to amazing food, to wonderful ambiance and service – I want them to just say, “Wow,” as they leave.
Why have you stayed with this company?
Opportunity, one hundred percent. I’ve been able to work my way up since I’ve been here. Today, I’m especially excited about and confident in the direction the company is heading.
Morrissey’s whole guiding principle is “authentic hospitality” and I think that’s why we do so well. That principle is trickled down from the executive team, and that goes a long way. Ultimately I want to be on a team with people who are passionate about what they do.
What lessons have you learned from working with Morrissey/in hospitality?
I think I’ve learned what it takes to be a good leader. I was trusted in a management role when I was still young – and I’ve learned a lot since then. Over time, I’ve learned what makes my staff tick. Everyone is different, and needs to be treated individually. I’ve learned how to earn trust and to be a respected leader.
What is the best part about working for Morrissey Hospitality?
Morrissey Hospitality makes it easy to take pride in what we do. I don’t think other places hold themselves to the same standards that Morrissey does. The passion and pride at Morrissey is unmatched.
Would you recommend working for Morrissey Hospitality? If yes, why?
Yes. The company is growing. We have great leadership – they never settle, they’re always looking for ways to improve and to do things better. Whether it is technology or staffing, they are always open to ideas from others. It doesn’t get better than what we have to offer.
What are your other interests (family, hobbies, school)?
My passion for food and drink doesn’t go away when I leave this building. I love new breweries, new restaurants and new cocktail bars. I’m in a wine club with other friends, and I’m studying to take the Level II Certification from the Master Court of Sommeliers. I also love to travel – I take at least a couple trips a year.
This or that:
- Summer or winter? Summer.
- Pizza or pasta? Pasta.
- Mountains or lakes? Lakes.
- Twins or Vikings? Twins!
- Early bird or night owl? Night owl, for sure.
- Zombies or vampires? Zombies.
- Books or movies? Movies.
- Hot or cold? Hot.
- Cats or dogs? Dogs.
- Planning or winging it? Plan, but I’d say I’d be right in the middle.
